Bobotie
Bobotie is VERY simple:
2 onions, sliced or chopped
2 tbsp butter
1 kg lean beef mince
1 ¼ cup milk
3 eggs
2 slices white bread, cubed
¼ cup finely chopped dried apricots
1 apple, peeled and grated
¼ cup seedless raisins
2 tbsp sugar
1 tbsp curry powder
2 tbsp lemon juice
2 tsp salt
freshly ground pepper
¼ tsp borrie or Tumeric
6 bay leaves
Sauté the onions in the hot butter until golden. Add meat and stir until it looses its redness. Remove from the heat.
In a large bowl, mix together ¼ cup milk, one egg and bread cubes, mashing the bread with a fork. Add the apricots, apples, raisins, sugar, curry, lemon juice, slat and pepper and mix until well-blended. Add the meat mixture and mix lightly with a fork. Turn into a lightly greased oven-proof dish and spread evenly. Press the bay leaves across the top and bake uncovered for 30 minutes at 180 C.
Make a topping by beating the remaining 2 eggs and milk and borrie until just blended. Remove the dish from the oven. Pour topping over the meat and bake for another 10 minutes until the topping has set.
Serve with rice and chutney and any other curry accompaniments you may like.
