Devils mixture
1 tbsp prepared English mustard
4 tbsp chilli vinegar
1 tbsp horseradish grated
2 shallots, peeled and bruised
1 tsp sea salt
1/2 tsp cayenne pepper
1/2 tsp freshly-ground black pepper
1 tsp brown sugar, pounded in a pestle and mortar
2 tsp hot chillies, chopped
2 egg yolks
To make this deviling mixture combine all the ingredients in a bowl and beat to mix thoroughly.
Prepare your food, making a deep incision so the mix can penetrate then brush liberally with the deviling blend and cook. This is excellent for use with prawns, kidneys, onions and hard vegetables suitable for frying. It also makes a very spicy brushing sauce for kebabs and grilled fish
