1 pound lamb’s liver

2 onions

3 ounces shredded suet

4 ounces fresh white breadcrumbs

1tsp chopped sage

Salt and pepper

½ pint boiling water

Knob dripping

Corn flour

 

Mince the liver and onions, mix in suet, fresh breadcrumbs, sage and seasoning.

Roll mixture into small balls and place in a greased shallow oven proof dish; using the dripping to grease dish.

Pour in the boiling water, cover the dish then bake in the oven at 180C for 30 minutes.

Remove cover and continue baking for a further 10 minutes.

Thicken gravy with the corn flour before serving.
