Pan haggerty

Pan Haggerty is a dish from Northumberland, of potatoes and onions

 

24 g dripping

450g sliced potatoes

2 thinly sliced onions

100g Cheddar cheese

Salt & pepper

 

Melt dripping in a shallow pan, add layers of potatoes, onions, grated cheese, add salt and pepper. Put lid on pan and cook gently for 30 minutes or until potatoes/onions are almost cooked. Remove lid and brown dish under grill.

Good addition to cold meat.
