Samp and beans
2 cups plain samp with all the skins and dirt removed
2 cups sugar beans cleaned and rinsed
1 teaspoon salt
2 litres chicken stock
1 litre water.
Rinse the samp and soak in cold water overnight. Rinse the samp again and place in large saucepan, then add 1 litre of stock and 1 litre of water and boil for 2 hours. Whilst samp is boiling soak cleaned sugar beans for an hour. After two hours of boiling samp add sugar beans and cook for a further hour on low heat adding remaining stock as required; samp and beans should be soft and not too runny. Add salt and pepper to taste.
